FAIRFIELD MEMORIAL HOSPITAL DIETARY HIRES PROFESSIONAL CHEF - 2009-07-06

Fairfield Memorial Hospital’s Dietary staff has a new addition to their team. Chef Dave Coleman comes to Fairfield with over twenty years experience as a Professional Chef.  Coleman received his culinary degree through the Main Sheraton Vistana Resorts in Orlando, Florida.  While in Florida he was the Head Chef and Training Manager at 5-Star Restaurants within the resort over seeing twenty-one Chefs.  He has served celebrities, such as Donald Trump and John Mellencamp, to diplomats from foreign countries, including Great Britain, Japan and Australia.  The resort is only three miles from Disney World attracting people from all areas of the world.

 

“I feel a sense of accomplishment when I cook for the patients, residents, visitors, and staff of Fairfield Memorial Hospital.  Celebrities expect good food with all the fancy additions; however, the patients here appreciate it,” stated Chef Coleman.

 

“A few weeks ago we received the additional training from Chef Dunn from US Foodservice to learn how to improve our food placement and appearance.  Now we have added a professional Chef (Dave Coleman) to our staff, which will help us merge the state regulated healthcare menu with the piazzas of a 5-star restaurant.  This merge will allow us to make a great product we can be extra proud to serve,” stated Lisa Maez, FMH Dietary Director.

 

Maez added, “On his first day, Chef Coleman added his professional twist to the green beans and egg salad.  It is the little changes like this that will enhance our state regulated menu.” 

 

The dietary staff also expressed their excitement about the addition of a professional chef to their team, and they are interested to implement his creative new ideas to the menu. 

 

“It will take me a little time to learn the state healthcare menu regulations, but as soon as I know what I can do, I will give the menu my personal twist and adding creativity to the meals,” stated Chef Coleman.

 

Chef Coleman has been a Chef in many different types of restaurants, but relocated to the Fairfield area to take care of his mother who lives in Owensville, IN.  When it was learned that he was a Chef he was offered a position as a cook in dietary.  He and his wife, Cindy, and daughters, Amber and Ashley, reside in Mt. Carmel.
